Recipe: Chocolate Fudge Cake


My first official baking recipe on the blog! But don't worry Jake was in the kitchen helping me as this is the first cake I have ever baked! So I am pretty proud of myself, we took it along as desert to a dinner party with friends on the weekend and I can honestly say it tastes as good as it looks!

Ingredients:
  • 125g butter
  • 1 C sugar
  • 2 eggs
  • 1 tbsp vanilla essence
  • 2/3 C cocoa
  • 2 tbsp vinegar
  • 1 C milk
  • 1 3/4 C plain flour
  • 1 tbsp baking powder
  • 1 tbsp baking soda 
  • 1/2 C hot water

Directions: 
  1. Beat butter until creamy add sugar, eggs and vanilla, beat until light and fluffy.
  2. Blend cocoa and hot water to smooth mixture and then add gradually to the creamed mixture.
  3. Add vinegar to milk to sour.
  4. Sift together flour, baking powder, baking soda and a pinch of salt add together with the sour milk alternately into the creamed mixture.
  5. Pour into two greased 20cm cake tins and bake in oven at 180°C for 30 minutes
  6. Cool for 10 minutes before removing from tins and add chocolate icing.


Chocolate Butter Icing

Ingredients: 
  • 120 g butter
  • 1 egg
  • 3 tbsp milk
  • 1/2 C cocoa
  • 2 C icing sugar

Directions:
  1. Soften butter and beat well with egg top with milk until thick and creamy
  2. Sift cocoa and icing sugar, work into butter, egg and milk.
  3. Add a little bit more icing sugar if not thick enough.
